Fluffy Pancakes with Kefir
INGREDIENTS
· 2 eggs
· 2 cups (≈480 ml) kefir
· 1 ¾ cups (≈220 g) all-purpose flour
· 1 ½ teaspoons baking powder
· 1 teaspoon baking soda
· ¾ teaspoon fine sea salt
· 1 tablespoon maple syrup
· ½ teaspoon vanilla extract
PREPARATION METHOD
Prepare the batter – in a large bowl, mix the flour, baking powder, baking soda, and salt. Add the eggs, kefir, maple syrup, and vanilla. Stir gently until the dry ingredients are just incorporated, it’s okay if the batter is slightly lumpy; avoid overmixing.
Cook the pancakes – heat a large non-stick pan or griddle over medium–high heat. Lightly grease with butter or oil. Pour the batter in ¼ cup portions for each pancake. Cook for about 3 minutes, until bubbles form around the edges, then flip and cook another 2–3 minutes until golden on both sides.
Serve – place the pancakes on a platter or rack. Serve immediately with butter, maple syrup, and any other preferred toppings (fruits, chocolate, nuts, etc.).
